For those who are not aware, I work most Saturdays. Although, next Saturday is my last for year…the holidays are just too busy! (Can you believe the year is almost over)
I did have time this morning for a wonderful family breakfast before I headed out. I made some Buttermilk Pancakes. SO, remember when I talked about all the growth inhibitors and phytic acid in grains? A trick to using already ground grains is the let it sit and ferment over night before cooking. So, I typically make my pancake mix the night before and let it sit on the counter over night. This leaves with this really bubbly pancake mix (it bubbles and rises). It also makes some oft he fluffiest pancakes you've ever had. The flavor is slightly sour, like a sourdough bread, but not as strong.
Topped with a little bit of fruit (organic of course) and some grade B maple syrup, and a side of Nitrate Free ham. Now off to the office.
Hubby had the girls this morning, so I had lunch alone. They had a lunch date. Leftovers it is. I was using this opportunity to do some online shopping and laundry (my nemesis). So, I honestly didn't eat lunch until almost 2:00! Meatloaf, Mashed Potatoes, Broccoli, and some Fresh Pineapple.
This afternoon was house projects…and school projects.
M1 has an egg drop this week at school, so we needed to finish her container. I think she had some really cool ideas.
Hubby has been working on welding the railing for the girl's loft, reading nook in the living room. So, we got that painted and installed (it's going to be awesome).
I finished pruning the garden and cutting down some of my herb plants. I have a TON of oregano, sage and thyme right now…so don't be surprised if they pop up this week. Oregano Chimichurri?
Snack time was not so great, but it was not a lot of work. Opened a box of cheddar crackers.
Okay, let's be honest…junk food is junk food, no matter the "organic" before it. These crackers are something I would recommend, but man are they easy on occasion. But, just because it says organic and the ingredients list is legible, doesn't mean they are healthy. These are filler, they are empty nutrition, and should be considered that no matter the "organic" labeling before it. It's just a better version of junk (without all the preservatives and partially hydrogenated oils)
Last nights conversation that ended with pork inspired me. I pulled out a pork roast and did a crockpot of BBQ pork. Did you know you can put a frozen chunk of meat in the crockpot and have dinner that evening…so easy!
I had a jar of this really delicious Amish BBQ cause that is sweetened with Apple Puree. I sliced an onion, and cooked it for 10 hours on low. PERFECT!
To go with it, I made a simple Chia Seed Cole Slaw, and some Baked Sweet Potato Wedges. The Sweet Potatoes are simple with just oil, and baked at 375 for about an hour. To me sweet potatoes are sweet enough on their own, they don't need to be frilled with extra sugar. Maybe a dash of salt.
Chia Seed Cole Slaw Recipe
4 cups Cabbage, Shredded
2 Carrots, Shredded
1 Cup Quality Mayo
3 TBSP Apple Cider Vinegar
1 Tsp Dijion Mustard
1/4 Tsp Celery Seed
1 Tsp Chia Seeds
1/2 Tsp White Pepper
1 Tbsp Raw Sugar
Mix all dressing ingredients together, add cabbage/carrots, and stir together. Let sit 1 hour before serving.
How do you like to spend your evenings? Not going to lie, I really enjoy movies. I love sitting on the couch and watching a movie, cozy in a warm blanket, with a cup of tea.
My kids are typically on the same page, but we have been on a board game kick. Candyland is a favorite of M2. Tonight we are pulling out Monopoly JR. per M1. I am hoping for some Jenga action tomorrow.
