We are half way through the 30 Day Journey. WOW! This is going by fast!
Sunday Breakfast. This is typically a late breakfast (sleep in day), and a big breakfast. I had some leftover sweet potatoes, and made a breakfast sweet potato hash with them by adding in some Russets as well.
I make my Hash with other veggies. I started with some onion, celery, carrot and bell pepper diced small and sautéed it in some grass-fed butter till it was soft, then I added in the diced, cooked potatoes and sweet potatoes. I cooked for about 15 minutes. I pulled out some Venison Breakfast Sausage, made patties, and added it into the same skillet as the hash. I cooked it until the sausage was cooked through and the hash was browned. In a separate skillet I fried some eggs. To finish it off I just peeled some tangerines (should have bought more fruit at the store).
Another good morning of house projects. It was time to roast and puree our pumpkins. I roast them all! The small and the big. It makes for a less sweet pumpkin puree, but I am okay with that. The girls were big helps with de-seeding the pumpkins.
I remove the skin before cutting and cooking in the crockpot. Some recipes leave the skin on, but we decorated ours with paint this year, so they needed to be cleaned and peeled. 3 batched in total, each needed 4 hours on high in the crockpot. (will get to puree it tomorrow).
Finished up just in time for a quick, late lunch and a nice bike ride.
Quick Sandwiches. Nitrate Free Turkey, PepperJack, Avocado, Dijion Mustard, and Sprouts on Sprouted Wheat Bread.
I do need to mention that I do not exercise! Not in the regular, regimented, gym type of way. I live an active life! Or, at least I really try to. We do not spend a lot of down time around the house. I am constantly on the move. As a family, we try to stay busy with walks, hikes, bike rides, etc. I try to ride my bike when I can to get to places that are close. I walk my dog 2x a day, even if it's only 15 min each time. After school we play outside if we can, and I spend time playing with my kids and dogs. Tag, rollerblading, fetch, hide-and-seek. If we go to the park, I do things like the monkey bars, and play "hot lava monster" with my kids (basically a form of tag). If it's cold out, or bad weather, we will often make obstacle courses or have dance parties. I garden. Even though my garden is small, I do all the composting, picking, planting, tilling, mending by hand. I feel these all add up. I do on occasion make it to the gym, but it is rare. I have a Pilates class that I really enjoy, but make it about 1x a month. During the winter I am more likely to go the gym and "hike" on the treadmill, but at most it is once a week, and NOT routine.
Today we did a good family bike ride. From our home by City Park to Spring Canyon Park. We played at the park for a couple of hours, rode the bike course, and then rode home.
While I was prepping dinner M1 helped me get the pumpkin seeds ready for roasting. Great little before dinner, and while cooking snack.

I made my Asian Salmon a bit different tonight. I was low on Tamari, so I added some fresh squeezed orange juice. So the marinade went like this...
2 TBSP Toasted Sesame Seed Oil
4 TBSP Tamari
2 TBSP Brown Rice Syrup
1 Mandarin Orange Juiced
1 Tsp grated Ginger
2 Cloves Garlic minced
6 Green Onions, cut in half
I baked the fish for about 20 minutes at 400.
Served with white rice, steamed cauliflower, homemade kimchi, and a vegetable spring roll.
