Ugh! Even when you wake up feeling crummy, life goes on…no sick day being a parent or running your own business. COFFEE is a must a days like today, and something light on the tummy.
Sprouted Rye Toast with Grass-Fed Butter.
Lots of tea this morning. Kept with the Cold Care, Echinacea, and Mints.
Met an old friend for a lunch break. Pizza!!! Definitely not what I needed today, but it sure was good. I ended up taking 1/2 of this home.
Mascarpone, prosciutto, and arugula. It was very good.
So, the pizza was not the best option…I knew better. To make up for it, I made a brothy Wonton Soup.
Wonton Soup is super quick and easy to make. If you make bone broths or your own stocks, I recommend making them into concentrated consume. It lasts months in the fridge and is quick to re-constitute for nutritious broths.
8 Cups Water
8 TBSP Consume, or to desired taste
2 Green Onions Diced
15 Quality Potstickers (find a good brand or make your own)
6 thin slices fresh ginger
In a stock pot add water, consume, and ginger. Boil until consume dissolved, and broth begins to smell of ginger. Add Green Onions and Potstickers, boil until potstickers are cooked through. Serve.
I personally find gingered broths to be the most restorative food while I am under the weather. I almost instantly begin to feel better.
